Kerala is an amazing state. Everything about the state is just wonder, be it the festivals, natural beauty of the place, people, customs, traditions or the cuisine. Today, I shall tell one of my favourite breakfast recipes from Kerala, Appam.

Ingredients:
  • 2  cups raw rice soaked for 4-5 hours
  • 4  cups coconut shavings
  • 1  cup cooked rice
  • A pinch of yeast granules dissolved in some coconut water or little hot water
  • Salt and sugar to taste
Preparation Method:

Drain the soaked rice and grind it along with the coconut shavings and cooked rice to a fine thick paste. Add just enough water to make a fine thick paste. You can also use coconut water instead of plain drinking water for grinding which will enhance the taste of Appam. Add the yeast and mix lightly. Mix in the salt and sugar to taste. Allow the mixture to ferment at room temperature for at least 6 hours. Now heat a small non-stick wok and pour approximately half a cup of batter into it. Quickly but gently swirl the pan around in such a manner that only a thin layer of the batter covers the sides and a thick layer collects at the bottom. Cover the wok with a lid and cook the Appam on medium heat for about 3 to 4 minutes until the edges turn into golden crisp and the centre is soft and spongy. When the Appam is done, remove it from the wok.

Repeat the process and make all the Appams one by one.
